Sweetfish – Trota in Blue
A dish that allows you to enjoy the whole sweetfish.
Each part of the fish brings out its own distinctive character, making it enjoyable from beginning to end.
This is one of the best sweetfish dishes we have ever created.
We truly hope you will come and experience it for yourself.
We use wild sweetfish from the Sagami River.
